see this bowl of deliciousness?  it doesn’t really have a name.  It’s based off of some fried rice and fried quinoa (as in egg fried rice at the Chinese restaurant) recipes, but as with many of my creations, sort of took on a life of its own.
so here’s what I did:
threw a package of Bird’s Eye Asian Medley frozen veggies onto a frying pan and let it chillax there until the veggies were 100% thawed.  then I added a smidgen of canola oil and pushed it around a bit.
then I added half a box of cooked quinoa - I made the whole box in advance and left it in the fridge.  in my experience, cooked quinoa will last a couple of days.
once that was soft and all mixed together I made a well in the center of the pan and cracked an egg in there. you could probably do more than one egg, but it worked for me.  I smushed that around until the egg was incorporated and all cooked.
then I drizzled a packet of GF tamari over top of it - the Asian Medley veggies have a nice flavor so it doesn’t need much, but it just gives the quinoa a little kick.
and that made enough for two nights.
cool, huh?  healthy, vegetarian, gluten-free, VERY filling, and perfect for after Zumba.
oh, and delicious.  THAT TOO!
